Caribbean Roasted Vegetables

Add a hint of Island flavor to your boring roasted vegetables and make this side dish exciting and more appealing to taste. Go to Jamaica where this cuisine dominates the culinary atmosphere.


Ingredients

  • 3 medium potatoes, washed and cubed

  • 16oz bag fresh baby carrots

  • 16 oz bag of chopped zucchini

  • 16 oz bag chopped broccoli florets

  • ½ lb. fresh asparagus (tough bottoms cut off)

  • ½ lb. fresh white mushrooms, cut in halves

  • 2 Tablespoons Canola oil

  • 2 Tablespoons All Purpose Seasoning

  • 1 Tablespoon garlic paste

  • Salt & Pepper to taste

Directions


1.Preheat the oven to 400 degrees F. Line a large Pyrex tray with parchment paper.


2. Place cubed potatoes with skin, baby carrots, zucchini, broccoli, asparagus and mushrooms in the tray.


3. Drizzle canola oil over the vegetables then sprinkle Island Spice All Purpose Seasoning, salt & pepper and add garlic paste.


4. Mix the vegetables well in the tray then bake in the oven for about 25-30 minutes or until the vegetables are cooked.


This is a great healthy side dish next to grilled steak, baked fish or chicken.
